Blackened Tilapia with Secret Hobo Spices

Verdict: Win

This was so tasty! Especially with the crusty french bread. DY says that this is his favorite tilapia recipe to date. I cut the recipe in half and made a few changes. My adapted version is below.



Blackened Tilapia with Secret Hobo Spices adapted from Allrecipes
Yield: Makes enough to coat 8 tilapia fillets

INGREDIENTS
1 1/2 tbsp paprika
1/2 tbsp onion powder
1 pinch garlic powder
1/2 tsp ground white pepper
1/2 tsp ground black pepper
1 tsp cayenne pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1 tsp salt
1 lemon - optional

INSTRUCTIONS
In a small bowl mix together all of the spices. Coat the fish fillets with the spice mixture.

Heat a heavy skillet over high heat. Add oil, and heat until it is almost smoking. Place the fillets in the pan, and cook for about 3 minutes per side, or until fish is opaque and can be flaked with a fork. Remove from the pan and place onto slices of french bread. Squeeze lemon juice over the tilapia.
