Brussels sprouts may just be my favorite vegetable. Easy and delicious. Non-Brussels sprouts eaters have known to convert to Brussels sprouts lovers with this recipe from DY's mom.



Roasted Brussels Sprouts with Bacon
Yield: 8 servings

INGREDIENTS
2 lbs Brussels sprouts, stems cut off and halved
1 package (1 lb) thick cut bacon, cut into squares
olive oil
salt
pepper

DIRECTIONS
Preheat oven to 400 degrees F. Toss Brussels sprouts in olive oil until just coated. Evenly distribute Brussels sprouts and bacon pieces on baking sheets. Do not overcrowd the Brussels sprouts. Salt and pepper to taste. Roast for approximately 30 minutes until Brussels sprouts are cooked and bacon crispy.
