Roasted Brown Sugar Pork
Yield: depends on the size of the roast
INGREDIENTS
Boston butt pork roast
brown sugar
salt
DIRECTIONS
Pat dry the pork roast. Cut several diagonal slits on each side of the roast. Mix 2 parts brown sugar to 1 part salt to create enough to coat and rub into the roast. Wrap tightly in plastic wrap and place in a large plastic zipper bag to marinate overnight in the fridge.
Preheat oven to 300 degrees F. Remove roast from fridge and place on a roasting pan. Roast until internal temperature is about 145 degrees F, about 2 hours. Allow to rest before slicing.
